Method
Dough Preparation
Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Gradually add the boiling water to the flour mixture, stirring with a fork until the dough starts to come together. Knead the dough on a floured surface for about 5-7 minutes, until smooth and elastic. Cover with a damp cloth and let it rest for at least 30 minutes.
Filling Preparation
Prepare the Filling
In a medium bowl, combine the ground pork, chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, and season with salt and pepper to taste. Mix until all ingredients are well incorporated.
Assembly
Assemble the Pot Stickers
Divide the rested dough into small pieces (about 1-inch in size). Roll each piece into a thin circle (about 3 inches in diameter). Place a teaspoon of filling in the center of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal tightly, pleating the edges if desired.
Cooking
Cook the Pot Stickers
In a large skillet, heat a tablespoon of oil over medium heat. Place the pot stickers in the skillet in a single layer and cook until the bottoms are golden brown (about 3-4 minutes). Carefully add 1/4 cup of water to the skillet, cover immediately, and steam the pot stickers for another 5-7 minutes until cooked through. Remove the lid and cook for an additional 1-2 minutes to crisp the bottoms.
Dipping Sauce Preparation
Make the Dipping Sauce
In a small bowl, mix together soy sauce, rice vinegar, and chili oil. Sprinkle sesame seeds on top. Serve alongside the pot stickers.
