Preparation

Trim and cut

Wash the broccoli and drain well. Trim tough stem ends. Cut broccoli into even-sized florets (about 1 to 1.5 inches). If using stems, peel any tough outer layer and slice into 1/4-inch thick pieces so they cook evenly with florets.

Mix sauce

In a small bowl, combine oyster sauce, light soy sauce, sesame oil, sugar, and water or broth. If you prefer a slightly thicker glaze, dissolve the cornstarch in 1 tablespoon cold water and add to the sauce mixture; set aside.

Cooking

Heat pan

Place a large skillet or wok over medium-high heat. Add the neutral oil and let it heat until shimmering but not smoking (about 30 seconds).

Aromatics

Add the sliced or minced garlic and minced ginger to the hot oil. Stir-fry for 20–30 seconds until fragrant, taking care not to burn the garlic.

Sauté broccoli

Add the broccoli florets (and sliced stems, if using) to the pan. Toss to coat with the oil and aromatics. Season with the measured salt and pepper. Stir-fry for 2 minutes to start softening and lightly charring edges.

Steam to tenderness

Pour the prepared sauce mixture around the broccoli. Immediately cover the pan with a lid (or use a splatter screen) and let steam for 2–3 minutes, depending on floret size and desired tenderness. The broccoli should be bright green and tender-crisp.

Finish and glaze

Remove the lid and increase heat to medium-high. Stir and toss for another 30–60 seconds so the sauce reduces slightly and coats the broccoli. If you added cornstarch, the sauce should thicken and become glossy; if not, let it reduce until it lightly clings to the florets. Taste and adjust seasoning — add a pinch more salt or a dash of soy if desired.

To Serve

Transfer the sautéed broccoli to a serving dish. Drizzle any remaining pan sauce over the top. Garnish with sliced green onions and an extra small drizzle of sesame oil if you like. Serve hot as a side dish with rice or alongside main dishes.
