Prepare wings

Pat the chicken wings dry with paper towels. If whole wings, separate into drumette and flat and discard tips or save for stock. Lightly score thicker parts so marinade penetrates.

Make marinade

In a large bowl, combine lime juice, fish sauce, soy sauce, granulated sugar, minced garlic, chopped coriander stems, chopped Thai basil, shredded kaffir lime leaves (or lime zest), white pepper, and 1 tablespoon vegetable oil. Stir until sugar begins to dissolve.

Marinate

Add the wings to the marinade and toss thoroughly so each piece is coated. Cover and refrigerate at least 1 hour, preferably 3–4 hours. For best flavor, marinate up to 8 hours but not more than 12.

Bring to room temperature

About 20–30 minutes before cooking, remove the wings from the fridge to come to room temperature. Reserve the marinade for basting if desired, but do not reuse marinade that touched raw chicken unless boiled for 1–2 minutes.

Cook the wings

Choose one method: 1) Grill: preheat grill to medium-high (about 400°F / 200°C). Oil grates. Grill wings 10–12 minutes per side, turning, until skin is charred in spots and internal temp is 165°F (74°C). Baste with reserved boiled marinade during last 5 minutes. 2) Oven: preheat to 425°F (220°C). Arrange wings on a wire rack set over a rimmed baking sheet. Roast 30–35 minutes, flipping once halfway, until crisp and internal temp 165°F (74°C). 3) Pan-fry: heat 1 tbsp oil in a large skillet over medium-high. Cook wings in batches 10–14 minutes, turning often, until golden and cooked through. Finish in a 400°F (200°C) oven 8–10 minutes if necessary for even doneness.

Rest

Transfer cooked wings to a platter and let rest 5 minutes before serving so juices redistribute.

Spicy Dipping Sauce (Nam Jim)

Make the sauce while the wings marinate or cook. In a small bowl, mash the chopped chilies and minced garlic lightly with the back of a spoon or mortar and pestle to release flavors (adjust quantity to your heat tolerance).

Add lime juice, fish sauce and palm sugar. Stir vigorously until sugar dissolves. Add 1 tablespoon water to loosen to a dipping-sauce consistency.

Stir in chopped cilantro and sliced green onion. Taste and adjust: add more sugar if too sour, more fish sauce if too tart, or more lime if you want brighter acid.

Garnish & Serve

Arrange wings on a serving platter. Spoon the spicy dipping sauce into a small bowl alongside.

Garnish wings with fresh cilantro leaves, a sprinkle of toasted sesame seeds if using, and lime wedges for squeezing over the wings just before eating.

Serve immediately while hot. Recommend serving with jasmine rice or crisp vegetables to balance heat.
