Brine (optional)
If using the optional brine, dissolve 1 tablespoon kosher salt and 1 teaspoon sugar in 500 ml cold water. Submerge the chicken skins in the brine for 20–30 minutes in the refrigerator to remove blood and help even seasoning. After brining, drain skins and pat completely dry with paper towels. Excess moisture prevents crisping.
Prepare Skins
Trim any excess fat or large pieces of meat from the skins so they lay relatively flat. Cut skins into snack-size pieces about 5–7 cm (2–3 in) across for even frying.
Pat the skins thoroughly dry with paper towels. For best results, transfer to a wire rack set over a baking sheet and refrigerate uncovered for 30–60 minutes to air-dry the surface (this step improves crispiness).
In a large bowl, combine 1 teaspoon fine sea salt, 1 teaspoon white pepper, 1 teaspoon garlic powder and 2 tablespoons cornstarch. Toss the dry mixture with the dried chicken skins until pieces are lightly and evenly coated — cornstarch helps create a crisp, blistered surface.
Heat Oil
Pour about 1 liter neutral oil into a deep, heavy-bottomed pot or deep fryer, leaving at least 6 cm (2–3 in) headspace. Attach a thermometer and heat oil to 180°C (356°F). If you don’t have a thermometer, test by dropping a small piece of skin—if it sizzles and rises immediately, oil is ready.
Fry Skins
First Fry (render fat)
Working in small batches (4–6 pieces depending on pot size), gently add chicken skins to the hot oil. The goal of the first fry is to render underlying fat and start puffing the skin. Fry 2–3 minutes until you see fat bubbles and pieces begin to turn lightly golden. Remove with a slotted spoon and drain on paper towels or a wire rack. Reserve rendered fat in the pot if desired.
Rest Between Fries
Allow the pieces to rest 3–5 minutes to let residual fat redistribute. This staging prevents over-browning in the second fry.
Second Fry (crisp up)
Increase oil temperature to 190–195°C (374–383°F). Return skins in very small batches and fry 30–90 seconds, watching carefully — they will puff, blister and become golden-brown and ultra-crispy. Remove immediately and drain on a wire rack or paper towel-lined sheet. Continue with remaining batches.
Seasoning & Serve
While skins are still hot, transfer to a large bowl and sprinkle the Thai-style seasoning: 1 teaspoon sea salt, 1 teaspoon ground white pepper, 1 teaspoon ground coriander, 1 teaspoon chili flakes (optional), and 1 teaspoon lime powder or grated lime zest. Toss gently to coat evenly so the seasoning adheres to the hot surface.
Taste and adjust seasoning if needed. Serve immediately with lime wedges for squeezing and optional cilantro. Crispy skins are best eaten the same day to retain crunch.
