Method
Filling
Soften cream cheese at room temperature for 20–30 minutes, or microwave in 5–7 second bursts until easily stirrable.
In a medium bowl, combine softened cream cheese, finely chopped imitation crab, minced green onion, minced garlic, soy sauce, sesame oil, white pepper, and sugar. Mix until uniformly blended and slightly smooth. Taste and adjust seasoning if needed.
Transfer filling to a piping bag or small bowl for easier portioning. Chill for 10 minutes if the filling is too soft to handle.
Wontons & Assembly
Set up an assembly station: a small bowl with beaten egg (add a little cold water if desired) for sealing, a clean work surface, and the wonton wrappers stacked and covered with a damp paper towel to keep them from drying out.
Place a wonton wrapper on the work surface. If using square wrappers, orient as a diamond. Spoon or pipe about 1 teaspoon of filling into the center of each wrapper. (This recipe should make roughly 15 wrappers worth; portion 3 wrappers per finished serving to yield 5 pcs.)
Moisten the edges of the wrapper with a little beaten egg using your fingertip or a small brush. Fold the wrapper over the filling to form a triangle (for square wrappers) or fold into your preferred shape. Press out air pockets and seal edges firmly. For a classic Crab Rangoon purse shape, bring the four corners together and press to seal so it forms a small pouch. Ensure there are no gaps or cracks.
Place assembled wontons on a parchment-lined tray and cover lightly with a damp cloth while you finish assembling the rest to prevent drying and cracking.
Frying
Heat 3 cups neutral oil in a deep heavy skillet or pot over medium-high heat to 350°F (175°C). If you don’t have a thermometer, test by dropping a small piece of wonton wrapper—if it sizzles and browns in about 30–45 seconds, the oil is ready.
Fry the wontons in batches (do not overcrowd) for about 1.5–2.5 minutes, turning as needed, until they are golden brown and crisp. Use a slotted spoon to transfer them to a paper-towel-lined rack to drain excess oil.
Keep fried rangoon warm on a baking sheet in a 200°F (95°C) oven while you finish the remaining batches.
Serving
Arrange 5 pieces per plate. Serve immediately with about 1–2 tablespoons of sweet & sour sauce per serving for dipping.
Garnish with a sprinkle of sesame seeds and thinly sliced green onion if desired.
