Prepare chicken

Trim any fat from the chicken breasts and cut into long thin strips about 1/2 inch thick and 3–4 inches long so they fit on skewers.

Make marinade

In a bowl combine 3 tbs soy sauce, 2 tbs sweet soy sauce (kecap manis) or honey, 2 tbs vegetable oil, 1 tbs lime juice, minced garlic, ground coriander, turmeric, cumin, 3 tsp salt, and 1/2 tsp black pepper. Whisk until evenly mixed.

Marinate chicken

Add the chicken strips to the marinade and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes, ideally 2–4 hours. If short on time, 30 minutes will still impart good flavor.

Skewer

If using soaked bamboo skewers, thread 2–3 strips per skewer, leaving a little space between pieces so heat circulates. Arrange skewers on a tray and let rest 10 minutes at room temperature before grilling.

Grill or broil

Preheat grill to medium-high (about 400°F/200°C) or preheat broiler. Oil the grill grates or brush skewers lightly with oil. Grill the skewers 2–3 minutes per side, turning frequently, until chicken is cooked through and has light char (internal temperature 165°F/74°C). Total cook time about 8–10 minutes depending on thickness. For broiler, place a foil-lined pan 6 inches from heat and broil 3–4 minutes per side, watching carefully to avoid burning. Remove from heat and rest 3 minutes.

Peanut Dipping Sauce

Combine sauce ingredients

In a small saucepan or mixing bowl, combine 1/2 cup creamy peanut butter, 1/2 cup coconut milk (or water), 1 tbs sweet soy sauce (or 1 tbs brown sugar), 1 tsp soy sauce, 1 tsp lime juice, 1/2 tsp fish sauce (optional), grated ginger, minced garlic, and 1/2 tsp chili paste or sriracha if using.

Heat and adjust

If using a saucepan, warm the mixture over low heat, whisking until smooth and slightly thinned, about 2–3 minutes. If using a bowl, whisk vigorously and add warm water 1–2 tbs at a time until desired consistency. Taste and adjust seasoning: add more lime for acidity, sweet soy or sugar for sweetness, or more fish sauce/soy for saltiness.

Finish

Remove from heat and transfer to a serving bowl. Sprinkle with a pinch of chopped cilantro if desired.

To Serve

Arrange skewers on a platter with cucumber slices, lime wedges, and chopped cilantro. Serve warm skewers alongside the peanut dipping sauce. Squeeze lime over chicken before eating if desired.
