    In a medium bowl, beat the softened cream cheese until smooth using a fork or small whisk.

    Fold in the finely chopped crab meat, sliced green onions, minced garlic, soy sauce, sesame oil, sugar, and white pepper until evenly combined. If using cilantro or chives, fold them in now. Taste and adjust seasoning; the filling should be flavorful since wrappers are mild.

    Cover and chill the filling for 15–20 minutes to firm slightly, which makes filling and sealing the wontons easier.

Wrappers & sealing

    Set up an assembly station: a small bowl of egg wash (beaten egg + 1 tbsp water) or plain water, a clean work surface dusted lightly with a bit of cornstarch (optional to prevent sticking), a baking sheet lined with parchment or a lightly oiled tray for the finished rangoons.

    Place one wonton wrapper on the work surface. Spoon about 1 rounded teaspoon (approximately 8–10 g) of the chilled crab-cream cheese filling into the center of the wrapper. Avoid overfilling to prevent leaking during frying.

    Brush the edges of the wrapper lightly with egg wash or water. Fold the wrapper in half to form a triangle (or bring opposite corners together for a traditional pouch shape). Press out air and seal edges firmly, crimping with your fingers or the tines of a fork. If you like the classic 'purse' shape, gather the four corners and pinch together sealing with a dab of egg wash.

    Place sealed rangoons on the prepared tray in a single layer. Repeat with remaining wrappers and filling. If not frying immediately, cover loosely and refrigerate for up to 2 hours.

Frying

    Pour oil into a deep pot or heavy-bottomed skillet to a depth of about 1½–2 inches (enough to submerge rangoons halfway to fully). Heat the oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small scrap of wrapper in the oil — it should sizzle and rise steadily without burning quickly.

    Working in batches (do not overcrowd the pot), gently lower 6–8 rangoons into the hot oil using a slotted spoon or spider. Fry, turning occasionally, until golden brown and crisp on all sides, about 2–3 minutes per batch depending on size and oil temperature.

    Use a slotted spoon to transfer fried rangoons to a wire rack set over a baking sheet or to paper towels to drain briefly. Let them rest 1–2 minutes to allow excess oil to drip off. Repeat with remaining rangoons and maintain oil temperature between batches (adjust heat as needed).

    For a lighter option, rangoons may be baked at 400°F (200°C) for 10–12 minutes, turning once, or air-fried at 375°F (190°C) for 6–8 minutes, flipping halfway, until golden — but frying yields the traditional crispness.

Sauce & garnish

    Pour the sweet chili sauce into a small serving bowl. If desired, squeeze a little lime juice into the sauce and stir to brighten the flavor.

    Arrange hot rangoons on a serving platter. Garnish with a sprinkle of sesame seeds and additional sliced green onions. Serve immediately with the sweet chili sauce and lime wedges on the side.
