    Prepare the Glass Noodles

    Soak the glass noodles in hot water for about 10-15 minutes or until soft. Drain and set aside.

    Cook the Eggs

    In a large pan or wok, heat 1 tablespoon of vegetable oil over medium heat. Beat the eggs and pour them into the pan. Scramble until fully cooked, then remove from the pan and set aside.

    Stir-fry the Ingredients

    In the same pan, add the remaining tablespoon of oil. Add chopped scallions and stir-fry for about 1 minute. Then add the soaked glass noodles and Pad Thai sauce, mixing well.

    Combine Everything

    Add the scrambled eggs and bean sprouts to the pan. Toss everything together and cook for another 2-3 minutes until heated through.

    Serve

    Plate the Pad Thai Woonsen and garnish with ground peanuts, fresh cilantro, and lime wedges. Serve immediately.
