Prepare the Noodles
Cook the thin rice noodles according to package instructions. Drain and set aside.
Make the Soup Base
In a large pot, heat some oil over medium heat. Add minced garlic and sauté until fragrant. Pour in the beef broth, then add fish sauce and soy sauce. Bring to a boil.
Add the Stewed Beef and Meatballs
Once the broth is boiling, add the stewed beef and beef meatballs. Let it simmer for about 15 minutes to allow flavors to meld.
Prepare the Sliced Beef
While the soup is simmering, prepare the sliced beef. Ensure it is thinly sliced for quick cooking.
Combine and Serve
In serving bowls, place a portion of the cooked rice noodles. Ladle the hot soup with stewed beef and meatballs over the noodles. Top with sliced beef, bean sprouts, scallions, and cilantro. Serve with lime wedges and chili paste on the side.
