Method
Preparation of Shrimp and Noodles
Cook the Shrimp
In a pot of boiling water, cook the shrimp for about 2-3 minutes until they turn pink. Drain and let cool.
Prepare the Vermicelli Noodles
Soak the vermicelli noodles in hot water for about 5 minutes until softened. Drain and rinse with cold water.
Pickled Veggies
Pickle the Vegetables
In a bowl, combine rice vinegar, sugar, and salt. Add sliced carrots and radishes, and let them sit for at least 30 minutes to pickle.
Assembling the Rolls
Prepare the Rice Paper
Soak a rice paper wrap in warm water for about 10-15 seconds until pliable. Lay it on a flat surface.
Fill the Wrap
Place a lettuce leaf on the lower third of the rice paper. Add a small amount of vermicelli noodles, shrimp, julienned carrots, cucumbers, and fresh herbs.
Roll the Wrap
Fold the sides of the rice paper over the filling, then roll it tightly from the bottom to the top. Repeat with remaining ingredients.
Serving
Serve the Rolls
Serve the shrimp rolls cold with pickled veggies on the side and hoisin sauce for dipping.
