Sushi Rice
Rinse and cook rice
Place the 2 cups of short-grain sushi rice in a fine-mesh sieve and rinse under cold running water, swishing with your hand, until the water runs clear (about 3–4 minutes). Drain and transfer to a pot with 2.2 cups water. Cover, bring to a gentle boil over medium heat, then reduce to low and simmer 12–14 minutes until water is absorbed. Remove from heat and let rest, covered, for 10 minutes.
Season rice
Meanwhile, in a small saucepan, combine 4 tablespoons rice vinegar, 2 teaspoons sugar, and 1 teaspoon fine sea salt. Warm gently and stir until sugar and salt dissolve; do not boil. Transfer the cooked rice to a large shallow bowl or hangiri if available. Pour the vinegar mixture evenly over the rice. Using a wooden spatula or rice paddle, cut and fold the rice to mix while fanning to cool it quickly to near room temperature (this gives the glossy texture). Cover with a damp towel to keep moist until assembly (up to 1 hour).
Filling Preparation
Prepare the smoked salmon: if slices are large, cut into long strips about 1/2 inch wide so they are easy to roll.
Prepare the cream cheese: keep at room temperature so it's spreadable. If desired, cut into 1/4-inch-thick long strips (length similar to nori) or soften further and transfer to a piping bag for neat application.
Prepare cucumber (optional): peel if desired, remove seeds, and cut into thin julienne strips about the same length as the nori sheet.
Assembly
Set up: place a bamboo rolling mat on a work surface and cover with plastic wrap to prevent sticking. Have a small bowl of water ready to wet your fingers.
Lay 1 nori sheet shiny-side down on the mat, with the long edge closest to you. Wet your fingers and take about 3/4 cup of seasoned sushi rice (adjust slightly so rice layer is even) and spread it evenly over the nori, leaving a 1-inch strip at the far edge uncovered. Press rice gently to an even 1/4-inch thickness. Repeat for each roll.
Flip method (inside-out alternative): For a traditional Philadelphia roll (rice on outside), place a sheet of plastic wrap on the mat, lay rice on the plastic and press to a rectangle slightly smaller than a nori sheet. Sprinkle with 1 teaspoon toasted sesame seeds and press lightly. Carefully flip the rice-covered plastic onto the nori sheet so rice faces down, then peel off plastic. If you prefer nori outside, skip this step.
Arrange fillings: about 1 inch from the near edge of the nori, place 2–3 strips of smoked salmon, 2–3 strips of avocado, a few cucumber sticks (if using), and a 1/4-inch strip of cream cheese along the length of the sheet. Do not overfill—leave margin for sealing.
Roll: Lift the near edge of the mat and begin to roll away from you, tucking the fillings in with your fingers to form a tight cylinder. Continue rolling while applying gentle, even pressure with the mat until sealed. Moisten the far uncovered edge of the nori with a little water to seal the roll.
Optional finish for inside-out rolls: If you made rice-on-outside rolls, after sealing, roll the cylinder in toasted sesame seeds to coat the outer rice surface evenly.
Rest and cut: Using a very sharp chef's knife, wet the blade and slice each roll into 6–8 equal pieces. Wipe the knife clean and wet again between cuts to keep slices neat.
Serving
Arrange the Philadelphia roll pieces on a platter. Serve with soy sauce, pickled ginger, and wasabi alongside. Optionally garnish with a few extra sesame seeds or a thin lemon wedge.
Storage: Consume within 24 hours for best texture. Keep refrigerated, wrapped tightly in plastic to prevent the rice from drying.
