Method
Sushi Rice
Rinse and Cook Rice
Rinse 2 cups short-grain sushi rice under cold water until the runoff runs clear (about 3–4 rinses). Drain. Combine rinsed rice and 2.25 cups water in a rice cooker or pot. If using a pot, bring to a boil, reduce to low, cover, and simmer 15 minutes. Remove from heat and let rest, covered, 10 minutes.
Season Rice
While rice cooks, warm 4 tablespoons rice vinegar, 2 tablespoons sugar, and 1 teaspoon kosher salt in a small saucepan over low heat just until sugar and salt dissolve. Do not boil. Transfer cooked rice to a large wooden or nonreactive bowl. Gently fold the vinegar mixture into the rice with a rice paddle or wooden spoon using cutting and folding motions to avoid smashing grains. Fan the rice as you fold to help it cool and become glossy. Allow rice to cool to slightly above room temperature (about 15–20 minutes). Optionally sprinkle 1 tablespoon toasted sesame seeds over rice and fold lightly.
Prep Fillings & Crunch
Prepare the imitation crab by splitting sticks lengthwise if thick, then cutting into long strips about 3–4 inches to fit roll length. Halve and pit the avocado, slice into long strips about 1/4-inch thick. Seed the cucumber, then cut into thin julienne strips. Thinly slice 1 green onion on the bias if using.
If using store-bought tempura flakes or tenkasu, have 1 cup ready. For extra crunch, combine 1 cup tempura flakes with 1/4 cup finely crushed fried shallot crisps in a bowl and mix gently.
Assembling Rolls
Prepare Mat and Nori
Wrap a bamboo rolling mat with plastic wrap to prevent sticking. Place 1 nori sheet shiny-side down on the mat.
Spread Rice
Wet your hands in the small bowl of water to keep rice from sticking. Scoop about 3/4 cup of seasoned sushi rice (adjust slightly as needed) and spread it evenly over the nori, leaving a 1/2-inch border at the top edge. Press rice gently to an even thickness (about 1/8–1/4-inch).
Flip for Inside-Out Roll (Optional)
For a California roll with rice-out (inside-out), carefully flip the nori+rice so the rice faces down on the plastic-wrapped mat and the nori is face-up. If you prefer a traditional inside nori, skip flipping and continue with rice on top of nori.
Roll
Lift the mat edge closest to you and begin rolling away from you, tucking the filling in with your fingers as you roll. Apply gentle even pressure to form a firm cylinder. Roll until the seam seals; use a little water on the nori border if needed to seal. For rice-out rolls, keep the seam side down on the mat for a minute to set.
Apply Crunch
Place the rolled sushi seam-down on the plastic wrap. Using your fingers, lightly press the roll into the bowl of tempura/panko mixture so the exterior rice picks up an even layer of crunch. For better adhesion, brush a very thin line of eel sauce on the rice surface before pressing into the flakes.
Chill Briefly (Optional)
If the roll feels too soft, chill wrapped roll in plastic wrap for 5–10 minutes to firm up before slicing.
Slicing & Finishing
Slice
Unwrap the roll and place on a cutting board. Wet a very sharp chef's knife with water and wipe it dry. Slice the roll into 6–8 even pieces with a single decisive downward motion, wiping and wetting the knife between cuts to keep clean edges. For best presentation, cut each roll into 8 pieces.
