Prepare Glass
Choose an old-fashioned or rocks glass. Pour the kosher or smoked sea salt onto a small plate. Run the lime wedge around the outer rim of the glass to moisten it. Hold the glass at an angle and gently press and twist the moistened rim into the salt to create an even salted edge. Set the glass aside.
Mix Cocktail
Combine ingredients
Fill a cocktail shaker halfway with ice. Add 2 oz mezcal, 1 oz fresh lime juice, 0.75 oz orange liqueur, and 0.5 oz agave syrup to the shaker.
Shake
Secure the shaker lid and shake vigorously for 12–15 seconds, until the outside of the shaker is very cold and well diluted.
Strain
Fill the prepared glass with fresh ice (large cube or crushed, per preference). Double-strain the cocktail into the glass using a Hawthorne or fine mesh strainer to remove ice shards and any pulp.
Garnish and finish: Float a thin lime wheel on the surface or tuck it onto the rim. Serve immediately.
