California Roll (10 pcs)
Prepare filling
Mix shredded imitation crab with 1 tablespoon mayonnaise and 1 teaspoon rice vinegar until evenly combined. Slice avocado and julienne cucumber. Have toasted sesame seeds ready.
Lay a bamboo mat on plastic wrap. Place 1 nori sheet shiny-side down on the mat. Wet hands lightly with water to prevent rice sticking.
Spread about 1 cup of seasoned sushi rice evenly over the nori, leaving a 1-inch (2.5 cm) strip at the top edge clear. Sprinkle sesame seeds over the rice if desired.
Using the bamboo mat, roll the nori tightly away from you, pressing gently to form a firm cylinder. Seal the edge with a little water on the bare nori strip.
With a sharp, wet knife, cut the roll into 10 even pieces. Wipe knife between cuts for clean slices. Plate on the serving tray with pickled ginger and wasabi.
Tempura Shrimp Roll (10 pcs)
If tempura shrimp are cold from refrigeration, warm briefly in a 350°F (175°C) oven for 3–4 minutes to restore crispness, then cool slightly so they are warm but not hot.
Place 1 nori sheet on the bamboo mat. Wet hands and spread about 1 cup of sushi rice evenly over the nori, leaving the top 1-inch clear.
Roll tightly with the bamboo mat and seal the edge with water. Press gently to form uniform shape.
Slice the roll into 10 pieces with a sharp wet knife. Arrange on the tray. Serve with extra eel sauce, soy sauce, ginger, and wasabi.
Spicy California Roll (10 pcs)
Place 1 nori sheet on the mat and spread about 1 cup seasoned rice over it, leaving the top 1-inch clear. Flip the nori so rice is down.
Roll tightly using the mat and seal the edge. Cut into 10 pieces with a wet knife. Garnish with toasted sesame seeds and place on tray.
Super Crunch Roll (10 pcs)
Mix a small amount (1 tablespoon) of spicy mayo with the shredded crab (if using) or set aside for drizzling. Warm the cooked tempura shrimp briefly if cold to restore crispness, then cool slightly.
Place 1 nori sheet on the mat and spread about 1 to 1.25 cups of rice over it (this roll uses slightly more rice). Flip so rice faces down.
Cut into 10 pieces using a sharp wet knife. Arrange on the serving tray, drizzle extra sauces as desired, and garnish with ginger and wasabi.
Tray & Serving
Arrange the four varieties on a single party tray in groups of 10 pieces each, leaving small gaps between types for garnishes.
Provide serving utensils or chopsticks and napkins. Note that fully cooked/precooked items should be kept chilled and consumed within recommended food-safety windows.
