Soften and mix cream cheese

Leave the cream cheese at room temperature for 15–30 minutes until soft, or microwave in 5–7 second bursts until spreadable. Transfer to a medium mixing bowl and beat briefly with a fork or small whisk until smooth.

Combine crab and aromatics

Finely chop the imitation or real crab meat into small pieces (about 1/4-inch). Add the chopped crab and sliced green onions to the bowl with the cream cheese.

Season filling

Add soy sauce, sesame oil, garlic powder, black pepper, and sugar (if using). Stir until completely combined and smooth. Taste and adjust seasoning — filling should be slightly salty and savory, not overly sweet.

Chill filling (optional)

For easier assembly, refrigerate the filling for 15 minutes to firm up slightly so it holds shape when scooped.

Prepare sealing paste

Mix the 2 teaspoons flour with 2 teaspoons water in a small bowl to make a thin paste (acts as glue).

Spoon filling onto wrappers

Lay a wonton wrapper flat on a clean surface with one corner pointing toward you (diamond shape). Using a small spoon or a 1-teaspoon measuring spoon, place about 1 level teaspoon (roughly 10–12 g) of the cream cheese–crab filling in the center of each wrapper. Do not overfill — leaving the edges clean ensures a good seal.

Fold and seal

Dip your finger into the flour paste and lightly moisten the edges of the wrapper. Fold the bottom corner up over the filling to meet the top corner, forming a triangle. Press out excess air around the filling and crimp the edges firmly to seal. Optionally, bring the two side points of the triangle together, overlapping slightly, and press to form the classic purse shape. Make sure all seams are well sealed to prevent oil ingress.

Repeat

Repeat with remaining wrappers and filling. Place assembled rangoons on a parchment-lined tray and cover loosely with a damp kitchen towel to prevent drying while you work.

Heat oil

Pour oil into a deep, heavy-bottomed pot or Dutch oven to a depth of about 2 inches (approximately 2–3 cups depending on pot size). Heat oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test by slipping in a small corner of wrapper — it should sizzle steadily and brown within ~30 seconds.

Fry rangoons in batches

Carefully lower 4–6 rangoons (depending on pot size) into the hot oil without overcrowding. Fry, turning occasionally with a slotted spoon or tongs, until golden brown and puffed, about 1 1/2–2 minutes per side (total 3–4 minutes).

Drain

Using a slotted spoon, transfer cooked rangoons to a paper towel–lined baking sheet to drain excess oil. Keep warm in a low oven (200°F / 95°C) if desired while finishing remaining batches.

Cool briefly

Allow rangoons to cool 1–2 minutes before serving — filling will be hot.

Arrange rangoons on a platter with sweet and sour or sweet chili sauce for dipping and lemon wedges on the side. Serve immediately for best texture: crisp wrappers and warm creamy filling.

Storage and reheat

Store any leftover cooked rangoons in an airtight container in the refrigerator for up to 2 days. Re-crisp in a 350°F (175°C) oven for 6–8 minutes or air-fry at 350°F for 4–6 minutes until heated through and crisp. Do not microwave (wrappers will become soggy).
