    Prepare and cook sausages

    Bring sausages to room temperature for 10–15 minutes. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add sausages and cook, turning occasionally, until browned on all sides, about 8–10 minutes. Reduce heat to medium-low, add 1/4 cup water to the pan, cover, and simmer 6–8 minutes until internal temperature reaches 160°F (71°C) for pork sausages. Remove sausages and let rest 3 minutes before slicing lengthwise or into 1/2-inch pieces. Season with 1/2 tsp salt and 1/4 tsp black pepper during the last minute of cooking if needed.

    Caramelize onions and soften peppers

    While sausages cook, heat 1 tablespoon butter and 1 teaspoon olive oil in a separate skillet over medium heat. Add the sliced onion and sauté 6 minutes until starting to soften. Add both bell peppers, 1/4 tsp salt and 1/8 tsp black pepper. Continue to cook, stirring occasionally, until onions are golden and peppers are tender, about another 6–8 minutes. If they brown too quickly, reduce heat and add a splash of water. Keep warm until assembly.

    Toast rolls and melt cheese

    Preheat broiler or oven to high/450°F (230°C) if not already used for fries. Split hoagie rolls and spread softened butter on cut sides. Place cut-side up on a baking sheet and toast under broiler or in oven 2–4 minutes until lightly golden — watch closely to avoid burning. Place sausages into the toasted rolls, top each sausage with a slice of provolone. If using oven, return sandwiches to broiler/oven for 1–2 minutes just until cheese melts. Alternatively, cover skillet with a lid for 30–60 seconds to melt cheese.

Condiments & Garnish

    Dress sandwiches

    Spread about 1 teaspoon Dijon mustard and 1 teaspoon mayonnaise on the roll (adjust to taste). Add cooked onions and peppers over the cheese and sausage, and garnish with pickled pepperoncini or pickles and hot sauce or red pepper flakes if desired.

    Cook fries

    For oven-baked fries: preheat oven according to package instructions (typically 425°F/220°C). Toss frozen fries with 2 tablespoons vegetable oil and spread in a single layer on a baking sheet. Bake 18–25 minutes, flipping once halfway, until golden and crisp. Season with 1 teaspoon salt immediately after removing from oven. For deep-frying: heat oil to 350°F/175°C and fry according to package directions until golden, then drain and salt.

Assembly and serving

    Place each assembled sandwich on a plate with a portion of fries (approximately 150 g per serving). Serve hot. Leftover sausages can be refrigerated for up to 3 days.
