    Prepare ingredients

    Peel and thinly slice the onion (enough to make about 1 cup). Core and thinly slice the bell pepper to measure 1/2 cup. Mince the garlic. If using a fresh tomato, finely dice it; if using tomato paste, have it measured and ready. Remove sausages from the fridge and pat dry.

    Brown sausages

    Heat a large skillet over medium-high heat and add 1 tablespoon olive oil. When oil shimmers, add the 4 sausages. Cook, turning occasionally, until browned on the outside (about 5–7 minutes).

    Finish cooking sausages

    Reduce heat to medium-low, cover the skillet, and cook sausages until they reach an internal temperature of 160°F (71°C) for pork (about another 6–8 minutes). If sausages are thick, you may add 2–3 tablespoons of water, cover, and steam briefly to finish. Remove sausages from skillet and set aside on a plate; keep warm and tent with foil.

    Sauté vegetables

    In the same skillet (leave about 1 tablespoon of fat; add remaining olive oil if needed), add the sliced onions and bell pepper. Sauté over medium heat until softened and beginning to caramelize, about 6–8 minutes. Stir occasionally so vegetables cook evenly.

    Add aromatics and seasoning

    Add the minced garlic and thyme to the skillet with the onions and peppers and cook 30–60 seconds until fragrant. If using fresh diced tomato, add it now and cook 2–3 minutes to soften; if using tomato paste, stir in the paste and cook 1 minute to remove raw flavor. Season with 1 teaspoon salt and 1/2 teaspoon black pepper, stirring to combine.

    Combine sausages with filling

    Slice each cooked sausage in half lengthwise or into 2–3 pieces, depending on roll size. Return sliced sausages to the skillet and toss with the onion-pepper mixture for 1–2 minutes to warm through and marry flavors. Taste and adjust seasoning.

    Prepare rolls

    Split the 4 rolls horizontally. Toast lightly in a toaster oven or under a broiler for 1–2 minutes until just crisp and warm. Spread about 1/2 tablespoon softened butter or mayonnaise on the cut sides of each roll and 1/2 teaspoon mustard on one side.

    Assemble sandwiches

    Place a slice of cheese on the bottom half of each warm roll. Divide the sausage-and-vegetable mixture evenly among the rolls, placing the hot sausage on the cheese so it melts slightly. Top with sliced pickles and a small handful of lettuce or arugula.

    Finish and serve

    Close the sandwiches and, if desired, press in a grill pan or sandwich press for 30–60 seconds to bind. Cut each sandwich in half and serve immediately.
