    Prep beef and aromatics

    Pat the beef pieces dry with paper towels; season with 1 tsp salt and 1/4 tsp pepper. Finely chop the onion and mince the garlic.

    Brown the beef

    Heat 1 tablespoon vegetable oil in a heavy skillet or Dutch oven over medium-high heat until shimmering. In two batches (to avoid crowding), add the beef pieces and sear until deeply browned on all sides, about 3–4 minutes per batch. Transfer seared beef to a plate.

    Sauté aromatics

    Reduce heat to medium. Add 1 tablespoon butter to the hot pan. Add the chopped onion and cook, stirring, until softened and beginning to brown, 6–8 minutes. Add the minced garlic and cook 30 seconds to 1 minute until fragrant.

    Deglaze and build sauce

    Stir in 2 tablespoons tomato paste and cook 1 minute. Pour in 1 cup beef broth, scraping the bottom of the pan to lift browned bits. Add 1 tablespoon Worcestershire sauce, 1 teaspoon brown sugar, 1 teaspoon smoked paprika, and the remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Return the browned beef and any accumulated juices to the pan.

    Simmer until tender

    Bring mixture to a gentle simmer, then reduce heat to low. Cover and cook until beef is tender and sauce has reduced to a thick, spoonable consistency, about 50–60 minutes. Uncover for the last 10 minutes if sauce needs thickening. Taste and adjust seasoning with additional salt and pepper if needed.

    Chop/Shred to sandwich texture

    Using two forks or a meat chopper, roughly chop or shred the cooked beef in the pan into bite-sized pieces so it's easy to pile on a bun. Keep warm over the lowest heat or in a 200°F (95°C) oven while preparing the sandwiches and fries.

    Prepare condiments and buns

    Mix mayonnaise and yellow mustard together in a small bowl. Split the 4 buns and lightly toast them in a hot skillet or under a broiler until golden, about 1–2 minutes per side; brush cut sides with a little butter if desired.

    Assemble sandwiches

    Spread a thin layer of the mayo-mustard on both cut sides of each bun. On the bottom bun, place a leaf of lettuce (if using), a generous scoop (about 4–5 oz) of the chopped beef, then top with one slice of cheddar cheese so it melts slightly from the hot meat. Add 1–2 tablespoons sliced dill pickles over the cheese, then cap with the top bun.

    Cut sandwiches in half if desired and serve immediately with fries on the side.

    Prepare potatoes

    Cut the scrubbed potatoes into 1/4-inch sticks for shoestring fries or 1/2-inch for classic fries. Rinse cut potatoes under cold water until water runs clear to remove excess starch; pat completely dry with a clean towel.

    Cook fries (oven method)

    Preheat oven to 425°F (220°C). Toss the dried potato sticks with 2 tablespoons vegetable oil, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon paprika (optional). Spread in a single layer on a baking sheet lined with parchment, leaving space between pieces. Roast, turning once, until golden and crisp, 25–30 minutes. Adjust seasoning immediately after coming out of oven.

    Alternative: Pan-fry

    Heat 2–3 tablespoons oil in a large skillet over medium-high heat. Add the potato sticks in a single layer (work in batches), and cook, turning occasionally, until golden brown and crisp, 10–15 minutes per batch. Drain briefly on paper towels and season with salt and pepper.
