Prepare the Lobster Stock

In a large pot, melt the butter over medium heat. Add the lobster shells and sauté for about 5 minutes until they turn red. Add onion, celery, carrot, and garlic, and cook until the vegetables are softened.

Add Tomato Paste and Wine

Stir in the tomato paste and cook for 2 minutes. Pour in the dry white wine and scrape the bottom of the pot to deglaze it. Let it simmer for about 5 minutes.

Add Water and Simmer

Add water and bring the mixture to a boil. Reduce the heat and let it simmer for 30 minutes. Strain the stock and set aside.

Make the Bisque

In the same pot, return the strained stock and add the lobster meat. Stir in the heavy cream and let it simmer for another 10-15 minutes. Season with salt and black pepper to taste.

Serve

Ladle the bisque into bowls and garnish with fresh parsley. Enjoy your warm Lobster Bisque!
