1. Prepare the Garlic Coating
Mince the garlic cloves and combine them in a bowl with olive oil, sea salt, black pepper, and fresh rosemary (if using). Mix well to form a paste.
2. Prepare the Picanha
Trim any excess fat from the picanha, leaving a thin layer for flavor. Score the fat in a crosshatch pattern to help the seasoning penetrate.
3. Coat the Picanha
Rub the garlic mixture all over the picanha, ensuring it is evenly coated. Let it marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator for more flavor.
4. Preheat the Grill
Preheat your grill to high heat. If using a charcoal grill, allow the coals to burn until they are covered with ash.
5. Grill the Picanha
Place the picanha fat-side down on the grill. Cook for about 15-20 minutes for medium-rare, flipping halfway through. Use a meat thermometer to check for doneness (130°F for medium-rare).
6. Rest and Serve
Remove the picanha from the grill and let it rest for 10 minutes before slicing. Serve it sliced against the grain.
