Oreo® Cookie Crust

Method

Preheat the oven to 350°F (175°C). Place Oreo® cookies in a food processor and pulse until they form fine crumbs (about 1¼ cups). If you don't have a processor, place cookies in a zip-top bag and crush with a rolling pin. Transfer crumbs to a bowl and stir in melted butter, 1 teaspoon granulated sugar, and a pinch of salt until evenly combined and the mixture holds together when pressed.

Press the crumb mixture into a 9-inch (23 cm) pie dish, covering the bottom and about ½ inch up the sides. Use the bottom of a measuring cup to press firmly and evenly. Bake for 8–10 minutes until set and fragrant. Remove from oven and cool completely on a wire rack. Reduce oven heat to 325°F (160°C) if continuing to bake filling; otherwise allow crust to cool fully before filling (chilling for 15 minutes speeds set).

Melt chocolate

Place the chopped bittersweet chocolate in a heatproof bowl. Set the bowl over a saucepan of simmering water (double boiler), ensuring the bowl doesn't touch the water. Stir until chocolate is fully melted and smooth. Remove from heat and let cool slightly (about 3–5 minutes).

Beat butter and sugar

In a large mixing bowl, beat the softened butter with an electric mixer on medium speed until smooth and pale (about 2–3 minutes). Gradually add the sifted confectioners' sugar, beating until creamy and fully incorporated (about 2 minutes). Scrape down the bowl as needed.

Add egg yolks and vanilla

Add the egg yolks one at a time to the butter-sugar mixture, beating briefly after each addition until smooth. Stir in the vanilla extract.

Combine chocolate and butter mixture

Pour the warm (not hot) melted chocolate into the butter/egg yolk mixture in three additions, mixing on low speed until fully combined and silky. If mixture looks slightly stiff, add the 3 tablespoons of heavy cream and mix until smooth. Taste and adjust texture — it should be glossy and spreadable.

Whip cream and fold

In a chilled bowl, whip 1 cup heavy cream with 1 teaspoon granulated sugar to soft-medium peaks. Reserve about 2 tablespoons for garnish if desired. Gently fold about one-third of the whipped cream into the chocolate mixture to lighten, then fold in the remaining whipped cream in two additions until homogenous and airy. Do not overfold — keep a light, mousse-like texture.

Spoon or pipe the chocolate filling into the cooled Oreo crust, smoothing the top with a spatula. Refrigerate for at least 3 hours (preferably 4–6 hours) until firmly set. For a faster set, chill for 1 hour then freeze 20–30 minutes but do not freeze solid.

Raspberry Coulis

Cook raspberries

Place the raspberries, 3 tablespoons sugar, and 1 teaspoon lemon juice in a small saucepan over medium-low heat. Cook, stirring gently, until the raspberries release their juices and begin to break down, about 4–6 minutes. If the mixture becomes too thick, add up to 1 teaspoon cold water to loosen.

Strain and cool

Remove from heat and press the raspberry mixture through a fine-mesh sieve into a bowl using the back of a spoon to extract as much liquid as possible. Discard seeds. Taste and adjust sweetness or lemon juice. Let the coulis cool to room temperature, then chill until ready to serve.

When ready to serve, drizzle the raspberry coulis over slices of the chilled chocolate silk pie or serve on the side. Garnish with reserved whipped cream, fresh raspberries, and shaved chocolate if desired.

Garnish (optional)

Top each pie slice with a dollop of the reserved whipped cream, arrange fresh raspberries around the edge or on top, and sprinkle with shaved chocolate or a light dusting of cocoa powder. Serve chilled.
