Pretzel Bites

Activate Yeast
In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until bubbly.

Make Dough
Add flour and salt to the yeast mixture. Mix until a dough forms, then knead for about 5 minutes until smooth.

Rise Dough
Let the dough rise in a greased bowl, covered, in a warm place for about 1 hour or until doubled in size.

Preheat Oven
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

Shape Bites
Divide the dough into small pieces, roll each into a rope, and cut into bite-sized pieces.

Boil Bites
In a large pot, bring water to a boil, then add baking soda. Boil the pretzel bites for about 30 seconds each.

Bake Bites
Transfer boiled bites to the baking sheet, sprinkle with coarse sea salt, and bake for 12-15 minutes until golden brown.

In a small bowl, whisk together yellow mustard, honey, apple cider vinegar, and garlic powder until smooth.

Add Liquids
Gradually whisk in milk and Dogfish Head beer. Continue stirring until thickened.

Finish Cheese Sauce
Remove from heat and stir in cheddar cheese, salt, and black pepper until cheese is melted and sauce is smooth.
