    Prepare the Slaw

    In a large bowl, combine the shredded cabbage and carrots. In a separate bowl, mix mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Pour the dressing over the cabbage mixture and toss to combine. Refrigerate until serving.

    Prepare the French Fries

    Peel and cut the potatoes into thick strips. Rinse them in cold water, then pat dry. Heat vegetable oil in a deep fryer or large pot. Fry the potatoes in batches until golden brown and crispy. Drain on paper towels and season with salt.

Cooking the Cod

    Make the Batter

    In a mixing bowl, whisk together flour, cornstarch, baking powder, salt, and black pepper. Gradually add cold sparkling water, mixing until smooth.

    Fry the Cod

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Dip the cod fillets into the batter, allowing excess to drip off. Carefully place the battered cod into the hot oil and fry until golden brown and cooked through, about 4-5 minutes. Drain on paper towels.
