In a skillet over medium heat, add olive oil. Once hot, add the diced onion and orange bell pepper. Sauté for about 3-4 minutes until softened.

Prepare the Vegetables

Stir in the chopped spinach and cook for another 2 minutes until wilted. Season with salt and black pepper.

Add Spinach

In a bowl, crack the eggs and whisk them until well combined. Add a pinch of salt and pepper.

Pour the beaten eggs over the sautéed vegetables in the skillet. Allow the eggs to set at the edges, then gently stir to combine.

Once the eggs are mostly set but still slightly runny on top, sprinkle the shredded cheddar cheese over the omelet.

Cover the skillet and let it cook for another 2-3 minutes until the cheese is melted and the eggs are fully cooked.

Carefully slide the omelet onto a plate, fold in half, and serve warm.
