Home Fries Preparation

    Cook the Potatoes

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes and onion. Season with salt, paprika, and black pepper. Cook until golden brown and tender, about 15-20 minutes, stirring occasionally.

Omelet Preparation

    Prepare the Vegetables

    In a separate pan, heat 2 tablespoons of olive oil over medium heat. Add the sliced mushrooms and cook until softened. Then add the caramelized onion, spinach, and diced tomato, cooking until the spinach wilts.

    In a bowl, beat the eggs with salt and black pepper. Pour the egg mixture into the skillet with the vegetables. Cook until the edges set, then gently lift the edges while tilting the pan to allow uncooked eggs to flow to the edges. Cook until fully set.
