Cook the Pasta

Bring a large pot of salted water to a boil. Add the orecchiette pasta and cook according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce

In a large saucepan over medium heat, melt the butter. Stir in the flour and cook for about 1 minute until golden, stirring constantly. Slowly whisk in the Dogfish Head 60 Minute IPA, followed by the milk. Continue whisking until the mixture thickens.

Add Cheeses and Seasoning

Reduce heat to low and add the cream cheese, sharp cheddar cheese, salt, black pepper, garlic powder, and paprika. Stir until the cheese has melted and the sauce is smooth.

Combine Pasta and Sauce

Add the drained orecchiette pasta to the cheese sauce and stir until the pasta is well coated.

Serve

Serve immediately. Optional: Top with lobster, bacon, buffalo chicken, or shrimp as desired.
