Prepare the Chicken
In a bowl, combine the buttermilk, salt, and Japanese pepper. Add the chicken thighs and marinate for at least 1 hour or overnight in the refrigerator.

Coat and Fry
In a separate bowl, place the flour. Remove the chicken from the marinade, letting excess drip off, and coat each piece in flour. Heat vegetable oil in a deep skillet over medium-high heat. Fry the chicken for 5-7 minutes on each side until golden brown and cooked through. Drain on paper towels.
Kimchi Slaw

Make the Slaw
In a large bowl, combine the shredded cabbage, carrots, chopped kimchi, rice vinegar, sesame oil, and salt. Toss well to mix and set aside.
Sweet Chili Aioli

Prepare the Aioli
In a small bowl, mix together the mayonnaise, sweet chili sauce, minced garlic, and lime juice until smooth. Set aside.

Assemble the Sandwich
Toast the burger buns if desired. Spread a generous amount of sweet chili aioli on the bottom half of each bun. Place a piece of fried chicken on top, followed by a scoop of kimchi slaw. Top with the other half of the bun, serve, and enjoy!
