Prepare the Dough
In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy. Gradually add flour and salt, mixing until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place in an oiled bowl, cover, and let rise for 1 hour or until doubled in size.

Shape the Pretzel Bites
Once risen, preheat your oven to 425°F (220°C). Divide dough into small pieces (about 1-inch each). Roll each piece into a rope and shape into a pretzel or bite.

Boil the Bites
Bring a large pot of water to a boil and add baking soda. Boil each pretzel bite for 30 seconds, then remove and place on a baking sheet lined with parchment paper.

Bake
Sprinkle coarse sea salt on top of the pretzel bites and bake for 12-15 minutes or until golden brown.

Serve
Remove from the oven and let cool slightly. Serve warm with mustard and cheese sauce.
