    Prepare the Potatoes

    Wash the Russet potatoes thoroughly under cold water. Peel the potatoes if desired, then cut them into even-sized sticks about 1/4 to 1/2 inch thick.

    Soak the Potatoes

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

    Heat the Oil

    In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature for best results.

    Dry the Potatoes

    After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.

    Fry the Potatoes

    Carefully add a batch of fries to the hot oil, frying them in batches to avoid overcrowding. Fry for about 4-5 minutes or until golden brown and crispy.

    Drain and Season

    Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with sea salt and black pepper to taste.
