Marinate the Chicken
In a large bowl, combine the buttermilk, salt, paprika, garlic powder, onion powder, and black pepper. Add the chicken thighs, making sure they are fully submerged. Cover and refrigerate for at least 1 hour, or overnight for best results.

Prepare the Coating
In another bowl, mix together the flour and cornstarch. Season with additional salt, paprika, and pepper if desired.

Heat the Oil
In a large, deep skillet or Dutch oven, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken
Remove chicken from buttermilk marinade, allowing excess to drip off. Dredge each piece in the flour mixture, pressing lightly to adhere. Carefully place the chicken in the hot oil and fry for about 6-8 minutes on each side, or until golden brown and cooked through. Use a meat thermometer to ensure internal temperature reaches 165°F (75°C).

Prepare the Spicy Mayo
In a small bowl, mix together the mayonnaise and hot sauce until well combined.

Assemble the Sandwich
Toast the burger buns. Spread a generous amount of spicy mayo on the bottom half, add the fried chicken, top with house pickles, and cover with the top half of the bun.
