Caramelized Onion Dip

    Prepare the Potatoes

    Wash and peel the russet potatoes. Slice them thinly using a mandoline or a sharp knife.

    Heat the Oil

    In a large pot, heat the vegetable oil to 350°F (175°C).

    Fry the Chips

    Carefully add the potato slices to the hot oil in batches. Fry until golden brown and crispy, about 3-5 minutes.

    Drain and Season

    Remove the chips with a slotted spoon and drain on paper towels. Sprinkle with salt while still hot.

    Caramelize the Onions

    In a large skillet over medium heat, melt 2 tablespoons of butter. Add the sliced onions and cook, stirring occasionally, until soft and caramelized, about 20-30 minutes.

    Mix the Dip

    In a bowl, combine the cream cheese, sour cream, mayonnaise, garlic powder, salt, and black pepper. Mix until smooth.

    Add Onions and Chives

    Fold in the caramelized onions and chives into the cream cheese mixture. Adjust seasoning to taste.

    Chill and Serve

    Cover the dip and refrigerate for at least 30 minutes before serving. Serve with the housemade chips.
