Marinate the Chicken
In a bowl, combine the buttermilk and chicken breasts. Let it marinate for at least 1 hour or overnight in the refrigerator for best results.

Prepare the Breading
In a separate bowl, mix together the flour, cornstarch, paprika, garlic powder, salt, and black pepper.

Fry the Chicken
Heat oil in a deep skillet over medium heat. Remove chicken from the marinade, allowing excess buttermilk to drip off, and dredge in the flour mixture. Fry the chicken pieces until golden brown and cooked through, about 6-7 minutes per side. Drain on paper towels.

Prepare the Aioli
In a small bowl, mix together the mayonnaise and sweet chili sauce. Adjust seasoning to taste.

Assemble the Sandwich
Toast the ciabatta rolls. Spread a layer of sweet chili aioli on both sides of the rolls. Place the fried chicken on the bottom half, top with kimchi, and cover with the other half of the roll.

Cut the sandwich in half and serve immediately.
