Prepare the Cauliflower
Preheat your oven to 425°F (220°C). Cut the cauliflower into florets and place them in a large bowl.

Season the Cauliflower
Drizzle the olive oil over the cauliflower florets. Sprinkle with salt and black pepper. Toss to coat evenly.

Roast the Cauliflower
Spread the seasoned cauliflower on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until golden brown and tender, stirring halfway through.

Make the Sriracha Aioli
In a small bowl, combine the mayonnaise, sweet chili sauce, sriracha sauce, garlic powder, and lemon juice. Mix well until smooth.

Serve
Once the cauliflower is roasted, remove it from the oven. Serve hot with the Sriracha aioli drizzled over the top or on the side for dipping.
