Marinate
Place trimmed chicken thighs in a bowl or resealable bag. Pour 1 cup buttermilk and 2 tbsp hot sauce over chicken, ensuring pieces are coated. Refrigerate and marinate at least 30 minutes, up to 4 hours.

Prepare dredge
In a shallow dish, whisk together 1.5 cups all-purpose flour, 0.5 cup cornstarch, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp smoked paprika, 0.5 tsp cayenne, 1.5 tsp kosher salt, and 1 tsp black pepper until evenly combined.

Heat oil
Pour vegetable oil into a deep skillet or Dutch oven to a depth of about 2 inches (about 1 liter). Heat over medium-high until oil reaches 350°F (175°C). If you don't have a thermometer, test with a small pinch of flour — it should sizzle gently and brown in ~30 seconds.

Dredge and fry
Remove chicken from marinade, allowing excess to drip off. Dredge each thigh thoroughly in the flour mixture, pressing the flour onto the surface to form an even coating. Shake off excess and set on a rack. Fry 2 pieces at a time (do not overcrowd) for 6–8 minutes, turning halfway, until coating is deep golden-brown and an instant-read thermometer in the thickest part reaches 165°F (74°C). Transfer to a wire rack set over a sheet pan to drain. Repeat with remaining thighs.

Make buffalo sauce
While chicken rests, melt 3 tbsp unsalted butter in a small saucepan over low heat. Stir in 1/2 cup hot sauce until smooth and warm (do not boil). Taste and adjust: add a pinch of salt or a tsp of honey if you want it milder/sweeter.

Coat chicken
Place fried chicken in a large bowl. Pour the warm buffalo sauce over the pieces and toss briefly to coat evenly. Alternatively, brush sauce onto each piece for a lighter coating.

Slice
Let chicken rest 2 minutes, then slice each thigh into 1/2-inch strips for easier wrapping.

Lay a warmed tortilla on a work surface. Spread about 2 tbsp of ranch or blue cheese dressing down the center of the tortilla, leaving 2 inches clear at each end.

Top the dressing with a generous handful (about 3/4 cup) shredded iceberg lettuce, a few tomato slices, a quarter cup shredded cheese, and some sliced green onions. Add pickled jalapeños if using (about 1–2 tbsp).

Place 3–4 strips of the buffalo fried chicken across the center of the fillings.

Fold the bottom edge of the tortilla up over the filling, then fold the sides in and continue rolling tightly to form a neat wrap. Repeat for remaining tortillas.

Cut each wrap in half on the diagonal and serve immediately with extra ranch or blue cheese on the side and lemon wedges for optional brightness.
