Flank Steak Preparation

Marinate the Steak

In a bowl, combine olive oil, garlic powder, salt, black pepper, and fresh rosemary. Rub this mixture all over the flank steak and let it marinate for at least 30 minutes.

Cook the Steak

Preheat your grill or pan over medium-high heat. Cook the marinated flank steak for about 6-7 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing.

Prepare the Potatoes

Preheat your oven to 425°F (220°C). Slice each potato thinly, but not all the way through, to create the hasselback effect. Place them on a baking sheet.

Season and Bake

Melt butter and mix with olive oil, salt, and thyme. Brush this mixture over the potatoes. Bake in the oven for about 45-50 minutes, basting occasionally, until crispy on the outside and tender on the inside.

Sauté the Mushrooms

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add kind oyster mushrooms, season with salt and black pepper, and cook for about 5-7 minutes until tender.

Make the Jam

In a saucepan, combine cherry tomatoes, sugar, balsamic vinegar, and salt. Cook over medium heat, stirring frequently, until the tomatoes break down and the mixture thickens, about 15-20 minutes.
