Trim and prep

Rinse turkey legs and pat dry with paper towels. Trim excess skin flap if desired, leaving most skin intact for crisping.

Make marinade

In a large bowl, whisk together buttermilk, apple cider vinegar, minced garlic, chopped thyme, chopped sage, 2 tsp Kosher salt, and 1 tsp freshly ground black pepper until combined.

Marinate

Place turkey legs in a large zip-top bag or nonreactive container and pour the buttermilk mixture over them, turning to coat completely. Press out excess air and refrigerate at least 8 hours or up to 24 hours. The buttermilk tenderizes and flavors the meat.

Prepare coating

Thirty minutes before cooking, combine all-purpose flour, cornstarch, smoked paprika, ground cumin, onion powder, garlic powder, dry mustard, 1.5 tsp Kosher salt, and 0.5 tsp coarse black pepper in a wide shallow dish or rimmed sheet. Whisk to blend and break up lumps.

Dredge turkey

Remove turkey legs from the marinade, letting excess drip off. One at a time, dredge legs in the flour mixture, pressing gently so the coating adheres to skin and any exposed meat. Shake off excess and place on a wire rack set over a sheet pan. Let rest for 20–30 minutes to set the crust (this helps develop a crisp finish).

Choose cooking method

You can deep-fry or oven-roast the coated turkey legs. Both methods are given below; choose one.

Deep-fry method (crispiest)

Heat neutral oil in a deep heavy pot or deep fryer to 350°F (175°C). Use enough oil to submerge legs (about 1 to 1.5 inches headspace in a pot). Fry 1–2 legs at a time (do not overcrowd) for 10–14 minutes, turning once, until coating is deep golden brown and internal temperature reaches 165°F (74°C). Transfer to a wire rack over a sheet pan to drain and rest 5 minutes. If necessary, finish in a preheated 350°F (175°C) oven for 5–10 minutes to ensure doneness without over-browning.

Oven-roast method (healthier, still crisp)

Preheat oven to 425°F (220°C). Place rack with coated legs on a baking sheet lined with foil and a wire rack. Lightly spray or brush each leg with neutral oil. Roast for 30–40 minutes, turning once halfway through, until skin is golden brown and internal temperature is 165°F (74°C). For extra crispness, broil 1–2 minutes at the end while watching closely.

Butter finish

While legs rest, combine melted butter, lemon juice, and chopped parsley. Brush or drizzle over legs to add gloss and subtle flavor. Optionally drizzle 1–2 tsp hot honey or regular honey over each leg for a sweet-spicy finish. Serve immediately.
