Prepare marinade

In a food processor or high-speed blender combine scallions, thyme leaves, scotch bonnet peppers (start with one if you want milder), garlic, ginger, brown sugar, soy sauce, apple cider vinegar, lime juice, olive oil, ground allspice, cinnamon, nutmeg, salt, and black pepper. Pulse until you have a coarse, slightly saucy paste. Scrape down sides and blend an extra 10–15 seconds until cohesive but not completely smooth — some texture is traditional.

Adjust seasoning and heat

Taste a small dab of the marinade (use caution with heat) and adjust: add more brown sugar for sweetness, extra lime or vinegar for brightness, or an extra pepper for heat. The paste should be bold and well-seasoned to penetrate the chicken during marination.

Prepare chicken for marinating

Trim excess fat from the chicken pieces. Using a sharp knife, make 2–3 shallow cuts through the skin into the meat of each thigh and drumstick — this helps the marinade penetrate.

Marinate

Place the chicken pieces in a large bowl or resealable plastic bag. Pour about three-quarters of the marinade over the chicken (reserve the remainder for basting and finishing). Massage the paste into the cuts and under the skin where possible, ensuring each piece is well coated. Cover and refrigerate for at least 4 hours and up to 24 hours. For best flavor, marinate 8–12 hours.

Bring chicken to room temperature

Remove chicken from the fridge 30–45 minutes before cooking to take the chill off; this promotes even cooking.

Preheat grill or oven

If grilling: preheat to medium-high (about 375–425°F / 190–220°C) with a two-zone setup if possible (one side hotter for searing, one cooler for finishing). If oven-roasting: preheat to 425°F (220°C) and line a rimmed sheet pan with foil or parchment; place a wire rack on the pan.

Cook on the grill (preferred)

Oil the grill grates lightly. Place chicken skin-side down over the hotter zone and sear until charred and browned, about 4–6 minutes. Flip and sear the other side 3–4 minutes. Move pieces to the cooler zone, brush with reserved marinade, close the lid, and continue cooking until an instant-read thermometer inserted into the thickest part reads 165°F (74°C), about 12–20 more minutes depending on piece size. Baste once or twice more near the end with remaining marinade and watch for flare-ups. Remove and rest 5–8 minutes.

Cook in the oven (alternative)

Place chicken skin-side up on the rack. Roast at 425°F (220°C) for 35–45 minutes, basting once halfway through with reserved marinade, until internal temperature reaches 165°F (74°C) and skin is browned. For more char, switch to broil for 2–3 minutes at the end, watching closely to avoid burning. Let rest 5–8 minutes.

Pan-sear and finish (stovetop option)

Heat 2 tablespoons vegetable oil in a large ovenproof skillet over medium-high heat. Sear chicken skin-side down until deeply browned, 5–7 minutes. Flip and transfer the skillet to a 400°F (200°C) oven until cooked through to 165°F (74°C), about 15–20 minutes, basting once with reserved marinade.

Finish & Serving

Rest and finish

Transfer cooked chicken to a platter and let rest 5–8 minutes so juices redistribute. Sprinkle with extra salt to taste if needed and scatter chopped cilantro or parsley over the top.

Serve

Serve jerk chicken with lime wedges on the side. Traditional accompaniments: rice and peas, fried plantains, or a fresh green salad. Spoon any pan juices or a little of the reserved marinade (heat it first to boil for safety) over the chicken when serving if you like extra sauce.
