Prepare crabs

Rinse cleaned soft‑shell crabs under cold water and pat dry thoroughly with paper towels. If leg clusters or spines are loose, tuck legs under the body so the crab holds its shape while frying. Lightly season both sides with 1 tsp salt and 1/2 tsp black pepper (from ingredients).

Make batter

In a medium bowl, whisk together 1 cup all‑purpose flour, 1/4 cup cornstarch and 1 tsp baking powder. In a separate small bowl, combine 1 cup cold sparkling water, 1 beaten egg and 4 ice cubes to keep the batter cold. Slowly fold the wet mixture into the dry ingredients just until combined — small lumps are fine. Keep the batter chilled in a bowl set over ice if possible.

Heat oil

Pour about 3 to 4 cups vegetable oil into a deep skillet or medium pot to a depth of about 2 inches. Heat the oil to 350°F (175°C). If you don't have a thermometer, test with a small drop of batter: it should sizzle and float up immediately but not burn.

Fry crabs

Working in batches (do not overcrowd), dredge each crab lightly in a tablespoon of extra flour (from the batter section) or shake off excess, then dip into the cold batter, coating completely. Carefully lower crab into hot oil and fry for 2.5–3.5 minutes per side until golden and crisp. Use tongs to flip gently. Remove to a paper towel–lined rack and keep warm in a 200°F (95°C) oven while frying remaining crabs. Total frying time will be ~10–12 minutes for 4 crabs.

Pickled Slaw & Sauce

Make quick pickled slaw

In a bowl combine 3 tbsp rice vinegar, 1 tsp sugar and 1/2 tsp salt. Add 2 cups thinly sliced green cabbage, 1 cup red cabbage, 1/2 cup julienned carrot and 1/4 cup chopped cilantro. Toss to coat and let sit for at least 10 minutes (up to 30 minutes) to soften and develop tang.

Make spicy lime mayo

In a small bowl whisk together 1/2 cup mayonnaise, 1 tbsp sriracha, 1 tbsp lime juice and 1/2 tsp honey until smooth. Taste and adjust heat or acidity as desired. Refrigerate until assembly.

Assembly & Garnish

Warm the 8 corn tortillas in a dry skillet over medium heat for 20–30 seconds per side or wrap in foil and heat in the oven for 5 minutes until pliable.

To assemble each taco: spread about 1 tablespoon of the spicy lime mayo on a warm tortilla. Place a small handful (about 1/2 cup) of pickled slaw on the tortilla, then set one fried soft‑shell crab on top. Add 2–3 slices of avocado, a sprinkle of fresh cilantro leaves and a tiny pinch of fine sea salt. Finish with a squeeze of lime wedge.

Serve immediately while the crab is hot and crisp, with extra spicy lime mayo and lime wedges on the side.
