Beat eggs
Crack the 4 large eggs into a medium mixing bowl. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1/4 teaspoon black pepper. Whisk vigorously until yolks and whites are fully combined and the mixture is slightly frothy (about 20–30 seconds).
Heat pan
Place a nonstick skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt, swirling the pan so the butter coats the bottom. The butter should foam but not brown.
Cook eggs
Pour the beaten eggs into the warm skillet. Let them sit undisturbed for about 10–15 seconds until edges begin to set. Using a silicone spatula, gently push the set edges toward the center, allowing uncooked egg to flow to the edges. Continue this gentle folding motion every 10–15 seconds until the eggs are mostly set but still slightly glossy and moist — about 2–3 minutes total depending on heat and pan size.
Finish
If using shredded cheddar cheese, sprinkle 1/4 cup over the eggs in the last 20–30 seconds of cooking so it melts into the eggs. Remove the pan from heat just before the eggs reach your desired doneness; residual heat will finish them. Taste and adjust seasoning with more salt and pepper if needed.
Optional Toppings & Garnishes
Transfer the eggs to warm plates or onto the 2 slices of sourdough toast. Sprinkle 1 tablespoon chopped fresh chives on top and add a dash (about 1 teaspoon) of hot sauce if desired.
