Mix and form patties

Place the ground beef in a large bowl. Add salt, black pepper, Worcestershire sauce, and garlic powder. Gently combine with your hands or a spatula until just incorporated — avoid overworking to keep burgers tender. Divide into 4 equal portions (about 4 oz each). Form each portion into a patty about 3/4 inch thick, making a shallow 1/2-inch-wide dimple in the center of each patty to prevent bulging during cooking.

Preheat cooking surface

If using a cast-iron skillet or griddle, place it over medium-high heat and let it get hot for 5 minutes. If grilling, preheat to medium-high (about 400°F/204°C). Lightly oil the pan or brush oil on the grill grates (use the neutral oil).

Cook patties

Place patties on the hot skillet or grill. Cook for about 3-4 minutes on the first side without moving so a crust forms. Flip once and cook another 3-4 minutes for medium doneness. In the last minute of cooking, place a slice of cheddar on each patty and cover the pan or close the grill lid to melt the cheese. Adjust timing +/- 1-2 minutes for desired doneness (less time for medium-rare, more for well done).

Rest

Remove patties from heat and let rest on a plate for 3-4 minutes to redistribute juices.

Prepare sauce

In a small bowl mix mayonnaise, ketchup, and yellow mustard until combined. Taste and adjust seasoning if desired (add a pinch of salt or a dash of hot sauce).

Toast buns

Spread the softened butter on the cut sides of the buns. Place buns cut-side down on the same skillet or grill over medium heat and toast until golden and fragrant, about 1-2 minutes.

Assemble burgers

Spread a tablespoon of the sauce on the bottom bun. Place a lettuce leaf, then the cheese-topped patty, followed by 2-3 tomato slices, a few onion rings, and pickles. Add more sauce to the top bun if desired, close the burger and serve immediately.

Optional (for searing/grill)

If you like a smoky kick, sprinkle smoked paprika on the patties before cooking, or add a light brush of neutral oil to the pan/grill to promote a better sear.
