Prepare the Vegetables

Peel and chop the turnip, carrot, and parsnip into small, even-sized pieces. Steam or boil them until tender, about 15-20 minutes. Drain and set aside to cool.

Make the Hummus

In a food processor, combine the cooked white beans, cooked turnip, carrot, and parsnip. Add 1 tablespoon of olive oil, salt, and pepper to taste. Blend until smooth, adding a little water if necessary to reach desired consistency.

Prepare Dill Yogurt

In a bowl, mix the Greek yogurt with chopped dill, a pinch of salt, and a drizzle of olive oil. Adjust seasoning to taste.

Assemble the Dish

Spread the white bean hummus on a serving platter. Top with pomegranate seeds and dollops of dill yogurt. Drizzle with additional olive oil and sprinkle with mixed picked herbs.
