Tart Preparation Steps
Prepare the Shallots
Preheat the oven to 200°C (400°F). Peel the shallots and cut them in half. Toss them with olive oil, salt, and pepper. Place them cut side down on a baking sheet and roast for 25-30 minutes until caramelized and tender.
Prepare the Tart Base
While the shallots are roasting, roll out your tart pastry (store-bought or homemade) and fit it into a tart pan. Prick the base with a fork and chill in the refrigerator for 15 minutes.
Assemble the Tart
Once the shallots are roasted and cooled slightly, spread the Boursin cheese evenly over the bottom of the tart shell. Arrange the roasted shallots on top.
Add Thyme and Cheese
Sprinkle the fresh thyme and grated Parmesan cheese over the shallots.
Bake the Tart
Bake the tart in the preheated oven for about 20-25 minutes or until the cheese is bubbly and the pastry is golden brown.
Finish and Serve
Remove the tart from the oven and let it cool slightly. Serve warm or at room temperature, garnished with fresh arugula and a drizzle of cranberry gastrique.
