Prepare the Pork Belly

Preheat your oven to 200°C (400°F). Season the pork belly with salt and pepper, then place it on a baking tray. Roast for about 30-40 minutes until the skin is crispy and the meat is cooked through. Let it rest before slicing into small pieces.

Sauté the Ingredients

In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the sliced pork belly and sauté for 3-4 minutes until crispy. Then, add the diced pineapple and chopped cashews, and cook for another 2 minutes.

Add the Rice

Add the cooked rice to the skillet, breaking up any clumps. Stir everything together and cook for an additional 5 minutes, allowing the rice to get a bit crispy.

Season and Serve

Stir in the sliced scallions and furikake seasoning. Remove from heat, and serve hot with a drizzle of chili aioli on top.
