Prepare the Cauliflower

Chop the cauliflower into florets and set aside.

Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for an additional minute.

Cook the Cauliflower

Add the chopped cauliflower to the pot and stir to combine. Pour in the vegetable broth and season with salt and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the cauliflower is tender.

Blend the Bisque

Using an immersion blender, blend the mixture until smooth. Alternatively, transfer to a blender in batches and blend until smooth.

Add Cream

Stir in the heavy cream and adjust seasoning with additional salt and pepper if needed. Heat gently until warmed through.

Serve

Ladle the bisque into bowls, garnish with a dollop of crème fraîche, a sprinkle of caviar, and serve immediately.
