A fruity, medium bodied chardonnay with cedar & spice flavors.

Carefully harvest the Chardonnay grapes when they are ripe, usually in late summer to early fall. Ensure to select only the best quality grapes.

Crush the grapes and press them to extract the juice. Collect the juice in a fermentation vessel.

Add sulfur dioxide to the grape juice to prevent unwanted bacteria and wild yeast from spoiling the wine.

Sprinkle the wine yeast over the juice. Allow it to ferment for about 1-2 weeks at a controlled temperature of around 18-22°C (64-72°F).

Once primary fermentation is complete, add malolactic bacteria to soften the acidity of the wine, which will take about 1-2 weeks.

Add medium toast oak chips to the wine for aging. Allow the wine to age for a minimum of 6 months to develop cedar and spice flavors.

After aging, filter and bottle the wine. Seal the bottles with corks and store them in a cool, dark place.

During the aging process, add a small piece of cedar wood and the spices (nutmeg and cinnamon) to the aging wine to infuse additional flavor.

Before bottling, taste the wine and if desired, add sugar to adjust the sweetness to your preference.
