Prepare Marinade
In a shallow dish or resealable bag combine bourbon, soy sauce, 1 tablespoon olive oil, brown sugar, minced garlic, 1/2 teaspoon black pepper, and 1/2 teaspoon kosher salt. Stir or shake to dissolve sugar.
Bleu Cheese Dressing
Make Dressing
In a bowl whisk together mayonnaise, sour cream, buttermilk, lemon juice, Worcestershire sauce, garlic powder, salt, and black pepper until smooth. Fold in 1/2 cup crumbled bleu cheese, reserving a tablespoon for garnish. Taste and adjust seasoning. Chill in refrigerator while you cook the steak and assemble salad.

Halve the cherry tomatoes. Crumble cooked bacon into bite-sized pieces. Roughly chop and toast walnuts in a dry skillet over medium heat, stirring until fragrant and lightly browned, 3-4 minutes; cool. Measure out mixed greens and set aside. Keep crispy fried onions and remaining bleu cheese ready for assembly.
Cook Steak
Heat a heavy skillet or cast-iron pan over medium-high heat until very hot. Add 1 tablespoon olive oil and 1 teaspoon butter. Pat steak dry with paper towels (discard leftover marinade). When oil is shimmering, add steak. For medium-rare (for a 1-inch thick strip): sear 3-4 minutes per side, flipping once; for medium, 4-5 minutes per side. During the last minute, spoon pan juices over steak and add optional fresh thyme or parsley. Transfer steak to a cutting board and tent loosely with foil; rest 5-8 minutes (important to retain juices).
After resting, slice steak thinly against the grain into 1/4-inch slices for easy salad bites.
Assemble Salad
In a large bowl or platter combine the mixed chopped greens and halved cherry tomatoes. Toss lightly with about half of the bleu cheese dressing to coat (add more to taste).
Arrange tossed greens on plates. Scatter crumbled bacon, toasted walnuts, and crispy fried onions evenly over the greens.
Fan sliced steak over the salad. Sprinkle reserved bleu cheese crumbles on top.
