Inspect and bring to temperature
Gently transfer the jumbo lump crab meat to a large bowl. Carefully pick through for any small bits of shell or cartilage; remove them with clean tweezers or fingers. Cover and refrigerate until ready, then remove 10–15 minutes before serving so the crab comes closer to room temperature (this keeps the flavor bright).
Season
Just before serving, squeeze the halved lemon over the crab meat, sprinkle the kosher salt and freshly ground black pepper evenly, and gently toss once or twice with a large spoon, taking care not to break up the lumps.
Herb-Butter Sauce
Prepare aromatics
In a small saucepan over medium-low heat, melt 2 tablespoons of the butter with the olive oil. Add the finely minced shallot and cook gently, stirring, until translucent and soft—about 2–3 minutes. Add the minced garlic and cook 30–45 seconds more until fragrant but not brown.
Deglaze and finish
Increase heat to medium and pour in the white wine (or stock). Let it simmer briskly for 1–2 minutes to reduce slightly. Stir in the remaining 2 tablespoons butter, Dijon mustard, and lemon juice until the butter has melted and the sauce is glossy. Remove from the heat.
Add herbs and season
Stir in the chopped chives, parsley, and optional tarragon. Season to taste with the listed salt and black pepper. Taste and adjust acidity with a few more drops of lemon juice or seasoning as needed. Keep the sauce warm; if you need to hold it, place the saucepan in a warm (not hot) water bath so the butter doesn't separate.
Assembly & Serve
Arrange the seasoned jumbo lump crab meat on a chilled serving plate or on plates for individual servings, keeping lumps intact for presentation.
Spoon the warm herb-butter sauce gently over the crab, using just enough to coat and highlight the flavor—about two tablespoons per serving. Reserve some sauce to pass at the table if desired.
