Honey Syrup (make ahead)

Combine

Measure equal parts honey and hot water (for example 1/2 cup honey + 1/2 cup hot water). Place honey in a jar or small saucepan and pour hot water over it.

Mix until combined

Stir or whisk until the honey fully dissolves and the liquid is uniform. Let cool to room temperature before using. Store refrigerated up to 2 weeks.

Chill glass

If you prefer, chill a coupe or martini glass by filling it with ice water while you prepare the cocktail.

Measure ingredients

Add 2 oz London Dry Gin, 0.75 oz freshly squeezed lemon juice, and 0.75 oz honey syrup into a cocktail shaker.

Add ice and shake

Fill the shaker with about 6 ice cubes. Secure the lid and shake vigorously for 12–18 seconds until the shaker is well chilled and slightly frosted. This both dilutes and aerates the drink for a silky texture.

Double strain and serve

Discard the ice water from the chilled glass (if used). Double strain the cocktail through a fine mesh strainer into the chilled coupe or a rocks glass with fresh ice, depending on preference.

Garnish

Express a lemon twist over the cocktail by holding the twist over the drink and giving it a gentle squeeze to release oils, then drop it in or lay it on the rim. Alternatively, garnish with a lemon wheel.
