Directions

  1. 1

    Cook the Spaghetti

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually around 8-10 minutes.

  2. 2

    Prepare the Pancetta

While the pasta is cooking, heat a large skillet over medium heat. Add the olive oil and pancetta. Cook until the pancetta is crispy and golden, about 5-7 minutes. Remove from heat and set aside.

  3. 3

    Mix the Eggs and Cheese

In a bowl, whisk together the eggs and grated Parmesan cheese until well combined. Add a generous amount of black pepper and mix again.

  4. 4

    Combine Pasta and Pancetta

Once the spaghetti is cooked, reserve about 1 cup of pasta water, then drain the spaghetti. Immediately add the hot spaghetti to the skillet with the pancetta and mix well.

  5. 5

    Add Egg Mixture

Remove the skillet from heat and quickly pour the egg and cheese mixture over the hot pasta, tossing rapidly to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is achieved.

  6. 6

    Serve

Season with additional black pepper and salt to taste. Serve immediately, garnished with extra Parmesan cheese if desired.
