Cooking Pasta

Cook Cavatappi
Bring a large pot of salted water to a boil. Add the cavatappi pasta and cook according to package instructions until al dente, usually about 8-10 minutes.

Drain and Rinse
Once cooked, drain the pasta and rinse under cold water to stop the cooking process. Set aside to cool.
Preparing Vegetables

Prepare Arugula
Wash the arugula thoroughly and dry with a salad spinner or paper towels. Place in a large mixing bowl.

Chop Roasted Red Peppers
If using whole roasted red peppers, chop them into bite-sized pieces and add to the bowl with arugula.

Crispy Shallots
Slice shallots thinly and fry in oil until golden brown, about 3-5 minutes. Drain on paper towels and set aside.
Making Vinaigrette

In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, salt, and black pepper until well combined.
Assembling Salad

In the bowl with arugula and red peppers, add the cooled cavatappi pasta and crumbled goat cheese.
